Banana Almond Oat Cookies

Ingredients:

  • 1 ripe banana {1/3 cup mashed}

  • 1 egg

  • 1/3 cup almond butter

  • 1/4 cup coconut sugar

  • 1 cup almond flour

  • 1 cup oats

Directions:

  1. Preheat oven to 350F and spray/line a baking sheet.

  2. In a large bowl, whisk together the mashed banana, egg, and almond butter.

  3. Stir in the flour, sugar, and oats until everything is well combined.

  4. Use an ice cream scoop or two spoons to make 14 cookies, roll each one into a ball, and slightly flatten. {Optional: top each cookie with a banana slice}

  5. Bake for 10 minutes & enjoy!
