Ooey Gooey Chocolate Chunk Banana Bread Bars

Ingredients:

2 ripe bananas (mashed)

1/2 cup @kitehillfoods unsweetened plain yogurt

1/2 cup almond milk

1/4 cup grapeseed oil (or melted coconut oil)

1 flax egg (2.5 tbsp. water with 1 tbsp. flax meal—stir together and let it sit for 5 minutes)

1 tsp. baking powder

1 tsp. cinnamon

1 cup almond flour

1 cup oat flour

1/3 cup vegan chocolate chips or chocolate chunks (I just chopped a chocolate bar)

Directions:

1.) Preheat the oven to 350F and spray/line an 8x8 baking dish.

2.) In a large bowl, whisk together the wet ingredients and in a small bowl, whisk together the dry ingredients.

3.) Add the dry ingredients to the wet ingredients and stir until well combined; fold in the chocolate chips/chunks.

4.) Pour batter into the pan and top with additional chocolate (optional.)

5.) Bake for 45 minutes and allow it to cool for at least 5 minutes before storing in the fridge. Enjoy!
