Lemon Poppyseed Pancakes

Ingredients:

1/4 cup @bobsredmill almond flour

1/4 cup @bobsredmill oat flour

1 tsp. poppyseeds (or chia seeds)

1/4 tsp. baking powder

1 scoop @ancientnutrition collagen (optional)

1 egg

2 tbsp. almond milk

Juice from half a lemon

Zest from half a lemon

Directions:

  1. Whisk together the egg, milk, and lemon juice; then stir in the rest of the ingredients.

  2. Pour small amounts of batter onto a greased pan.

  3. Flip once they get slightly bubbly.

  4. ENJOY!
