Cinnamon Bread Pudding

The ultimate comfort food...warm bread with cinnamon! I made a SUPER simple 'Cinnamon Bread Pudding' using Little Northern Bakehouse 'Sprouted 7 Grain' gluten free bread & it turned out sooo good & flavorful! It's hands down the fluffiest gluten free bread I've found yet & it's sourced from non-GMO & whole-food ingredients. THE perfect Mother's Day dish in my opinion :)

Ingredients:

1/2 loaf of Little Northern Bakehouse 'Sprouted 7 Grain' bread

  • 1 tbsp. cinnamon

  • 1/2 cup raisins

  • 2 eggs

  • 1 cup almond milk

  • 1/4 cup pure maple syrup or honey

Directions:

  1. Preheat oven to 350F and spray/line an 8x8 baking dish.

  2. Cut 1/2 a loaf of bread into little pieces and set aside.

  3. In a large bowl, whisk together the eggs, milk, syrup/honey, and cinnamon. Once well combined, stir in the raisins and bread.

  4. Pour everything into the baking dish and bake for 40 minutes.

  5. Once it's baked, you can serve it immediately or let it cool before storing in the fridge!
