Creamy Maple Dijon Pasta

During the winter I CRAVE warm dishes and this 'pasta' is the perfect meal to cozy up with on a cold night! It's not only super simple to make, but the flavor combo is aaamazing! I used 'CeCe's Veggie Co.' white potato noodles for the 'pasta' and created a sauce with less than 10 ingredients. It's very versatile, in that you can add any kind of protein/nuts/seeds/greens (I chose to saute some spinach with the noodles and top it with hemp seeds!)
Maple Dijon Sauce-
Ingredients:
1/2 cup almond milk
2 tbsp. dijon mustard
1 tbsp. pure maple syrup
Juice from half a lemon
1 tsp. garlic powder
1 tsp. onion powder
1/2 cup almond flour
Salt/pepper
Directions:
In a small sauce pan, stir together all of the ingredients and keep the heat on low until the sauce has warmed.
Noodles-
Ingredients:
1 tub CeCe's Veggie Co. Organic White Sweet Potato Noodles
2 tbsp. olive oilSalt/pepper
2 big handfuls of spinach
Directions:
In a large pan, heat the oil and saute the noodles for 4-6 minutes.
About halfway through the time, add in the spinach (if desired.)
When the noodles and spinach have cooked down, add the sauce and stir until everything is combined!
