Microwave Pumpkin Bread

Dreaming of fall weather with this delicious pumpkin bread! I am definitely one of those people who enjoys pumpkin year round hehe.. so I just had to share this super simple recipe with you guys!

Ingredients:

1 egg

1-2 tbsp. pure maple syrup/honey

3 tbsp. pumpkin puree

1/4 tsp. baking powder

3 tbsp. almond flour

1 tbsp. coconut flour

1 tsp. pumpkin pie spice (or cinnamon)

1-2 tbsp. walnuts/pecans (optional)

Directions:

  1. In a microwaveable cereal bowl or mug, whisk together the egg, pumpkin puree, and pure maple syrup.

  2. Stir in the rest of the ingredients, fold in nuts (optional), and microwave for 2 minutes! It pairs really good with nut butter and yogurt too :)
