Banana Bread Muffins

Ingredients:

2 ripe bananas

1/4 cup Coconut oil (melted)

2 Eggs

2 tbsp. Pure maple syrup (optional)

1/4 cup Almond milk

1 tsp. Vanilla

1 1/2 cup Bob’s Red Mill gluten free all-purpose flour

1 tbsp. Cinnamon

1 tsp. Baking powder

Directions:

  1. Preheat oven to 350F and spray/line a muffin tin.

  2. In a small bowl, whisk together all of the wet ingredients.

  3. In a medium sized bowl, stir together all of the dry ingredients.

  4. Pour the wet ingredients into the dry ingredients and stir until well combined.

  5. Pour into muffin tins and bake for 18-20 minutes!
